Mississippi Mud Cake

Indulge in a rich, chocolatey dessert layered with gooey marshmallows and topped with a glossy chocolate icing.

  • 2¼ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • ¾ cup whole milk
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 (10-ounce bag) mini marshmallows
  • 1 cup chopped pecans
  • ½ cup unsalted butter (for icing)
  • 3 tablespoons unsweetened cocoa powder (for icing)
  • 5 tablespoons whole milk (for icing)
  • 3 cups confectioners’ sugar (for icing)
  • 1 teaspoon vanilla extract (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13 inch baking pan.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, salt, and baking soda. Set aside.
  3. In another bowl, whisk together the sugar, oil, milk, eggs, and vanilla until combined.
  4. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Remove from the oven and sprinkle marshmallows and pecans on top. Allow to cool in the pan.
  7. For icing, melt butter in a saucepan, stir in cocoa powder and milk until smooth.
  8. Remove from heat, whisk in confectioners’ sugar and vanilla until smooth.
  9. Once the cake has cooled, pour the icing over it, spreading evenly.
  10. Allow to set before cutting into squares and serving.

Notes

Ensure ingredients are at room temperature for the best results. Store leftovers in an airtight container.
