Mint Chocolate Cake

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup mint chocolate chips
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until everything is combined and the batter is smooth.
  4. Carefully stir in the boiling water. Fold in the mint chocolate chips gently.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.
  8. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing well. Then mix in the heavy cream and peppermint extract until light and fluffy.
  9. Once the cakes are completely cool, spread a layer of frosting between the two layers, then frost the top and sides of the cake. Optionally, decorate with extra mint chocolate chips.

Notes

Ensure all ingredients are at room temperature for better mixing. You can freeze un-frosted layers for up to 3 months.
