Lunchbox Magic: 15-Minute Pizza Muffins

Delicious and easy-to-make pizza muffins, perfect for lunchboxes or as a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded cheese
  • 1/2 cup diced pepperoni
  • 1 tablespoon Italian seasoning
  • 3/4 cup milk
  • 1/4 cup olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, combine flour, baking powder, salt, and Italian seasoning. Whisk until well combined.
  3. In a separate bowl, mix together the milk and olive oil. Pour this mixture into the dry ingredients and stir until just combined.
  4. Gently fold in the shredded cheese and your choice of pepperoni or veggies.
  5. Spoon the batter into each muffin cup until they are about 3/4 full.
  6. Bake for 12-15 minutes until golden brown and a toothpick inserted comes out clean.
  7. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Muffins can be frozen for longer storage.
