Irresistibly Creamy Cheesesteak Tortellini in Rich Provolone Sauce

A comforting blend of tortellini and classic cheesesteak flavors in a creamy provolone sauce that is perfect for busy weeknights.

Ingredients

Scale
  • 1 lb cheesesteak meat (ribeye or sirloin, thinly sliced)
  • 912 oz fresh tortellini (cheese or meat-filled)
  • 12 bell peppers (sliced)
  • 1 medium onion (sliced)
  • 1 cup heavy cream
  • 12 cups provolone cheese (shredded)
  • 12 tbsp olive oil
  • 2 cloves garlic (minced)
  • Salt and black pepper (to taste)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers, stirring frequently until tender, about 5 minutes.
  2. Add thinly sliced cheesesteak meat to the skillet, cooking for another 5-7 minutes until browned.
  3. Pour in the heavy cream, stirring until combined. Lower the heat, gradually adding shredded provolone cheese while stirring continuously until melted and creamy, about 3-4 minutes.
  4. If your tortellini is fresh, cook it according to package instructions (about 2-3 minutes in boiling water). For frozen tortellini, follow the package cooking time.
  5. Gently fold the tortellini into the creamy cheesesteak sauce, ensuring even coating. Simmer for an additional 2 minutes.
  6. Taste and adjust seasoning with salt and pepper. Garnish with extra provolone or fresh herbs before serving.
  7. Serve hot and enjoy!

Notes

Feel free to substitute the meat or cheese as per your dietary preferences. This dish also freezes well and can be reheated easily.
