Ingredients

Scale
  • 1 cup Guinness beer
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream (for frosting)
  • 1/2 cup powdered sugar (for frosting)
  • 1 cup Irish cream liqueur (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a cake pan.
  2. In a large bowl, whisk together the Guinness beer and melted butter until well mixed. Stir in the granulated sugar, eggs, and sour cream until thoroughly combined.
  3. In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  4. Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  5. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  6. For the frosting, beat the softened butter until creamy. Gradually add in the powdered sugar, mixing well, then incorporate the Irish cream and heavy cream until smooth and fluffy.
  7. Once the cake is completely cooled, frost the top and sides with the Irish buttercream. Slice and serve.

Notes

Ensure butter is melted but not too hot to prevent cooking the eggs during mixing.
