Gooey Coffee Caramel Cake

A decadent dessert featuring rich coffee and gooey caramel in a moist cake, perfect for gatherings or weeknight treats.

  • 1 cup brewed coffee
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) or prepare your slow cooker on high heat.
  2. In a large bowl, combine brewed coffee, melted butter, brown sugar, and vanilla. Stir until well-blended.
  3. Sift in the all-purpose flour and baking powder. Gently fold until just combined.
  4. Add eggs one at a time, mixing well after each addition until smooth.
  5. Pour half the batter into a greased baking pan or slow cooker. Drizzle half of the caramel sauce, then layer with the remaining batter. Top with the rest of the caramel sauce.
  6. Bake for 30-35 minutes or cook in the slow cooker for 1 hour, until a toothpick comes out clean.
  7. Let cool for a few minutes before slicing.
