Frosted Red Velvet Cupcake Cookies

  • 1 tablespoon cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon milk
  • 1 tablespoon red food coloring
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the softened butter and granulated sugar together until fluffy and light in color, about 3-4 minutes.
  4. Add the egg, milk, red food coloring, and vanilla extract to the butter-sugar mixture and mix until combined.
  5. Gradually add the dry mixture into the wet mixture, stirring until just combined.
  6. Using a cookie scoop or tablespoon, drop the dough onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, until the edges are set but the centers are still soft. Let them cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. Can freeze for up to three months.
