Crockpot Pierogi Casserole with Kielbasa

A hearty and flavorful casserole combining layers of creamy potato and cheese-filled pierogi with kielbasa, cooked slowly to enhance the flavors.

  • 2 pounds frozen pierogi (potato-filled or cheese-filled)
  • 1 pound kielbasa, sliced
  • 4 medium potatoes, peeled and diced
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream (for serving)
  • 1 medium onion, chopped
  • 1 tablespoon oil (for sautéing onions)

Instructions

  1. Prep the Ingredients: Peel and dice the potatoes and chop the onion.
  2. Sauté the Onions: In a skillet over medium heat, heat the oil and sauté the onions for about 5 minutes until translucent.
  3. Layer the Ingredients in the Crockpot: Place a layer of frozen pierogi at the bottom, followed by a layer of diced potatoes, half the sautéed onions, and a layer of kielbasa.
  4. Repeat the Layers: Add another layer of frozen pierogi, the remaining potatoes, kielbasa, and top with the rest of the onions.
  5. Cheddar Cheese Top: Sprinkle cheddar cheese over the top.
  6. Cook: Cover and cook on low for 6-8 hours.
  7. Serve It Up: Spoon into bowls and top with sour cream before serving.

Notes

Can be prepared in advance and stored in the fridge. Add vegetables or substitute ingredients based on preferences.
