Crispy Parmesan Potatoes

Crispy outside, fluffy inside, these Parmesan potatoes are a delightful side dish suitable for any occasion.

Ingredients

  • 2 lbs of baby potatoes
  • 1/4 cup of olive oil
  • 1/2 cup of grated Parmesan cheese
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a large bowl, drizzle the potatoes with olive oil and toss to coat.
  4. Sprinkle in the garlic powder, oregano, salt, and pepper; toss again to distribute.
  5. Add the grated Parmesan cheese and gently toss until evenly coated.
  6. Spread the potatoes on a baking sheet and bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
  7. Remove from the oven and serve hot.

Notes

For extra crispiness, mist the potatoes with cooking spray before roasting. Store leftovers in an airtight container.
