Cranberry Orange Chicken

A delightful sweet-and-sour fusion dish featuring tender chicken, tart cranberries, and aromatic orange flavors, perfect for weeknight dinners or gatherings.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 orange, zested and juiced
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry with a paper towel and season with salt and pepper.
  2. In a large skillet, heat a tablespoon of oil over medium-high heat, then sear the chicken for about 5 minutes on each side until golden brown.
  3. Combine cranberries, orange juice, zest, brown sugar, soy sauce, and garlic powder in a bowl and mix well.
  4. Once the chicken is seared, pour the cranberry-orange mixture over it in the skillet.
  5. Reduce heat to low, cover, and let it simmer for about 20 minutes until the chicken is fully cooked to 165°F (75°C).
  6. Transfer to a serving platter, spoon the sauce over the chicken, and garnish with orange zest or fresh herbs if desired.

Notes

This dish works well with chicken thighs for a richer flavor. Serve over rice or alongside mashed potatoes.
