Impressive Cranberry Brie Stuffed Chicken

A succulent chicken breast stuffed with creamy brie and tangy cranberry sauce, perfect for weeknights or holiday gatherings.

  • 2 large chicken breasts
  • 4 ounces brie cheese
  • ½ cup cranberry sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to about ½ inch thick.
  3. Season both sides of the chicken with salt and pepper.
  4. Spoon about 2 tablespoons of cranberry sauce and a slice of brie onto one side of each chicken breast. Fold over and secure with toothpicks or kitchen twine.
  5. Heat olive oil in a skillet over medium heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for an additional 20 minutes.
  7. Check for doneness, ensuring the internal temperature reaches at least 165°F (74°C). Allow to rest before slicing and garnish with thyme.

Notes

Perfect when served with roasted vegetables or a fresh salad. Leftovers can be stored for up to 3 days in the refrigerator.
