Cowboy Butter Chicken Pasta

A creamy, buttery pasta dish with tender chicken and bold spices, perfect for weeknight dinners and gatherings.

  • 8 oz pasta (penne or fusilli)
  • 1 lb boneless chicken thighs
  • 1/2 cup unsalted butter
  • 4 cloves garlic (minced)
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. Cut the chicken thighs into bite-sized pieces and season with salt, pepper, smoked paprika, and onion powder.
  3. Melt the butter in a large skillet over medium heat, add the seasoned chicken, and cook for 5-7 minutes until golden brown.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the cooked pasta to the skillet, tossing to coat in the buttery garlic sauce. If too dry, add reserved pasta water.
  6. Taste and adjust seasoning with more salt and pepper if needed.
  7. Transfer to serving plates and garnish with fresh parsley.

Notes

Garnish with extra parsley and a squeeze of lemon juice for added flavor.
