Instructions

  1. Prepare the strawberries: Clean and hull fresh strawberries, or if using frozen, allow them to thaw slightly. Puree the strawberries in a blender until smooth.
  2. Dissolve the gelatin: In a medium saucepan, heat 1 cup of water until hot but not boiling. Add the gelatin and stir until completely dissolved, about 2-3 minutes.
  3. Combine the ingredients: Add the pureed strawberries to the gelatin mixture and stir well to ensure even distribution. Stir in the sweetener and lemon juice if using.
  4. Transfer to a mold: Pour the mixture into a gelatin mold or individual cups, allowing air bubbles to rise.
  5. Chill the mixture: Place the mold in the refrigerator and let it set for at least 4 hours, or until firm to the touch.
