Indulgent Cinnamon Roll Cookies

Cinnamon Roll Cookies combine the soft, gooey goodness of cinnamon rolls with the convenience of cookies, perfect for any occasion.

  • ½ cup Butter, softened
  • ¾ cup Granulated Sugar
  • ¾ cup Brown Sugar, packed
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 2 ½ cups All-Purpose Flour
  • 2 teaspoons Baking Powder
  • 2 tablespoons Cinnamon
  • 1 cup Powdered Sugar
  • 23 tablespoons Milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg and vanilla extract, and beat until fully incorporated.
  4. In another bowl, whisk together the flour, baking powder, and cinnamon. Gradually incorporate the dry mixture into the wet ingredients until a soft dough forms.
  5. Roll the dough out on a floured surface into a rectangle about ¼ inch thick. Spread the mixture of softened butter, brown sugar, and cinnamon over the dough and roll it tightly.
  6. Slice the rolled dough into ½-inch thick pieces and place on the prepared baking sheet, leaving space in between each cookie.
  7. Bake for 10-12 minutes until edges are lightly golden.
  8. Whisk together the powdered sugar and milk for the icing, drizzle over cooled cookies.

Notes

Chill the dough for about 30 minutes if possible to help meld flavors and make handling easier.
