Cinnamon Roll Cookies

Soft and chewy cookies that capture the warm, sweet aroma of cinnamon rolls, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • ½ cup brown sugar, packed (for filling)
  • 2 tsp ground cinnamon (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well combined.
  3. In another bowl, cream the softened butter along with the granulated sugar and packed brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until smooth and fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. For the filling, mix together the packed brown sugar and ground cinnamon until well blended.
  7. Take half of the cookie dough and spread it into a rectangle on parchment paper.
  8. Sprinkle the filling mixture evenly over the dough, then roll it up tightly using the parchment paper.
  9. Slice the rolled dough into rounds about ½ inch thick and place them on a baking sheet lined with parchment paper.
  10. Bake for 10 to 12 minutes or until the edges are golden brown. Allow to cool slightly before serving.

Notes

For a smoother dough, ensure your butter is very soft; chill the dough if it’s too sticky. These cookies freeze well.
