Chocolate Turtle Cake

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped pecans
  • 1 cup chocolate chips
  • 1 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 to 5 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Gradually add this dry mixture alternately with the buttermilk to the creamed mixture, starting and ending with the dry ingredients. Mix just until combined.
  5. Fold in the chopped pecans and chocolate chips.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for about 10 minutes, then transfer to a wire rack to cool completely.
  9. Once cooled, layer the cakes with caramel sauce in between the layers, drizzle more caramel sauce on top, and sprinkle additional chopped pecans before serving.

Notes

For a more intense chocolate flavor, use dark cocoa powder. Store leftover cake in an airtight container for up to 3 days.
