Chocolate Orange Layer Cake with Ganache

  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup orange juice (freshly squeezed, strained)
  • 1 tbsp orange zest
  • ½ cup sugar (for filling)
  • 2 tbsp cornstarch
  • 3 large egg yolks
  • 2 tbsp unsalted butter (for filling)
  • 8 oz (225 g) dark chocolate, chopped
  • 1 cup heavy cream
  • 2 tbsp unsalted butter (for ganache)
  • Fresh orange slices or candied orange peel (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
  3. Add the eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Gradually stir in the hot coffee or water until the batter is smooth.
  5. Divide the batter among the pans. Bake for 25 to 30 minutes, or until a toothpick comes out clean.
  6. Cool the cakes completely in the pans on a wire rack.
  7. For the orange filling, whisk sugar, cornstarch, and egg yolks in a saucepan. Slowly whisk in orange juice and cook until thickened. Stir in zest and butter, then cool.
  8. For the ganache, heat heavy cream until steaming. Pour over chopped chocolate, let sit for 2 minutes, then stir until smooth. Stir in butter and let cool slightly.
  9. Assemble the cake by layering and spreading the orange filling. Pour ganache over the top and garnish with orange slices or candied peel.

Notes

Allow cake layers to cool completely before assembling to prevent the filling from melting. Adjust orange zest based on preference for a stronger flavor.
