Chewy Sugar Cookies

These chewy sugar cookies are soft, buttery, and full of nostalgic sweetness, perfect for any occasion.

  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/3 cups white sugar
  • 1/3 cup for rolling
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt until well combined.
  3. In a large bowl, beat the softened butter and 1 1/4 cups of sugar using an electric mixer until light and fluffy.
  4. Add the egg, egg yolk, vanilla extract, and almond extract (if using) to the butter mixture; mix until smooth.
  5. Gradually add the flour mixture to the butter mixture, mixing gently until fully combined.
  6. Roll the dough into balls, approximately 1 tablespoon each, and roll them in the remaining sugar. Place on prepared cookie sheets, spaced about 2 inches apart.
  7. Bake for 8 to 10 minutes, until just set on top. Allow cooling on baking sheets for 10 minutes before transferring to a wire rack.

Notes

Ensure butter is softened for best texture. Store cookies in an airtight container for up to one week. Dough can be frozen for up to 3 months.
