Comforting Cajun Chicken Mac and Cheese

A creamy and cheesy macaroni dish infused with Cajun spices and tender chicken, perfect for family dinners.

  • 8 ounces elbow macaroni
  • 1 pound boneless, skinless chicken breasts
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 3 cups whole milk
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the elbow macaroni until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat, season chicken with salt, pepper, and Cajun seasoning, and cook until fully cooked. Let rest before chopping.
  3. In the same skillet, lower the heat, add milk, and whisk continuously. Gradually add shredded cheeses, stirring until melted and smooth.
  4. Fold cooked elbow macaroni into the cheese sauce.
  5. Stir in the diced chicken and mix well.
  6. Serve immediately, garnished with more Cajun seasoning or herbs if desired.

Notes

Store leftovers in an airtight container for up to 3 days and reheat gently.
