Brown Sugar Pop Tart Cookies

Deliciously nostalgic cookies filled with sweet brown sugar and cinnamon.

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • Filling of your choice (e.g. fruit preserves or brown sugar filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cream together the softened butter and packed brown sugar until light and fluffy, about 2-3 minutes.
  3. Add in the egg and vanilla extract, mixing until well incorporated.
  4. In a separate bowl, combine flour, baking powder, and cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, mixing on low until a slightly sticky dough forms.
  6. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Roll out the dough to about 1/4 inch thickness and cut out rectangles.
  8. Place a teaspoon of filling on half of the cutouts, top with remaining rectangles, sealing edges with a fork.
  9. Bake for 12-15 minutes until golden brown and filling bubbles slightly.

Notes

Chill the dough to prevent excessive spreading during baking and experiment with different fillings to create unique flavors.
