Chocolate Crinkle Cookies

  • 3/4 cup granulated sugar
  • 1/4 cup light olive oil (or avocado oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar (for rolling)
  • 1/3 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In two separate shallow bowls, place the granulated sugar and powdered sugar for rolling. Set them aside.
  3. In a large mixing bowl, combine the cocoa powder, granulated sugar, and oil. Mix until well combined.
  4. Add the eggs and vanilla extract to the cocoa mixture, stirring until just mixed together.
  5. Incorporate the salt, baking powder, and all-purpose flour, mixing until you have a stiff dough.
  6. If the dough is too sticky, refrigerate it for 30 minutes to make it easier to handle.
  7. Roll the dough into 1 1/2 inch balls. First, coat each ball in granulated sugar, then roll in powdered sugar.
  8. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake in the preheated oven for about 10 minutes, or until the tops have crinkled and the edges are set.
  10. Allow the cookies to cool on the baking sheet for 5 to 10 minutes before transferring them to a wire rack to cool completely.

Ensure ingredients are at room temperature for better mixing. Consider adding extra cocoa powder for a richer flavor.
