Beefy Tortellini Bake

A creamy, comforting bake combining al dente tortellini, savory ground beef, and a rich cheese sauce, perfect for weeknight dinners.

  • 2 cups tortellini (fresh or frozen)
  • 1 pound ground beef
  • 1 cup diced tomatoes
  • 2 cups cheddar cheese (shredded)
  • 1/2 cup heavy cream
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup spinach or kale (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Add diced tomatoes and Italian seasoning to the skillet. Cook for an additional 3-4 minutes.
  4. In a large bowl, combine the cooked beef mixture, tortellini, heavy cream, and half of the cheddar cheese. Mix until well combined.
  5. Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, garnished with extra herbs or Parmesan if desired.

Notes

Leftovers can be stored in an airtight container for up to 3-4 days. Reheat in the oven for best results.
